Ingredients:
¼ cup packed light brown sugar
½ cup butter, softened
1 egg, separated
½ teaspoon vanilla extract
1 cup all-purpose flour
¼ teaspoon salt
¾ cup finely chopped pecans
high quality raspberry preserves (I use Bonne Maman)
Heat oven to 350 degrees. Mix brown sugar, butter, egg yolk and vanilla. Mix in flour and salt just until dough holds together.
Shape dough into 1 inch balls.
Beat egg white slightly. Dip each ball into egg white. Roll in nuts and place about 1 inch apart on ungreased cookie sheet. Press thumb deeply in the center of each but do not break through. Bake until light brown, 8-9 minutes.
Immediately remove from cookie sheet and cool on cooling rack. Fill thumbprints with jam.
Yields about 2 dozen cookies.
